I had my first peppermint mocha latte at Starbucks a few years ago and fell in love! It’s my go-to drink, even during the high heat of summer. The only things I don’t like are the price and sugar content.
Several months ago I discovered Trim Healthy Mama and
began to cut sugar from my diet. I do not own any of their books and do not follow the eating plan closely, but I joined their Facebook group and follow THM boards on Pinterest. I have learned about some good sugar alternatives and low carb recipes from THM. I’m not completely sugar free yet, but I’m working on it.
I absolutely love coffee and do not go a day without it. I knew I had to come up with a good sugar-free peppermint mocha latte recipe. I experimented a little, and now I don’t even feel the need to go to Starbucks.
If you’re like me and enjoy bullet-proof coffee, I have included the ingredients for that too.
- 2 Cups coffee
- 1 Tbs cocoa powder
- 1/2 – 1 Tsp peppermint extract (I always use 1 tsp because I love it extra minty.)
- 1/4 Tsp vanilla extract
- 2 Tsp Pyure or your sweetener of choice
- 2 Tbs heavy whipping cream or your milk of choice
- Pinch of salt
- 1 Tbs collagen (optional)
Added Ingredients for Bullet Proof
Add all of the ingredients to a blender and blend it for about 30 seconds. Pour it in a mug. It will have a nice froth at the top. If you like, you can add sugar-free whipped cream and a dusting of cocoa powder for garnish.
